Just an idea that popped into my head but would you like it if Disney released animated made-for-TV movies based on EU novels or whatever? This would made those stories canon as well I guess!
An animated Shadows of the Empire, in the style of The Clone Wars or Rebels would be really cool, having Mark, Carrie, Billy Dee, etc back to do the voices.
Darth Bane's back story, based on the trilogy but retconned to fit current canon, done by the team behind the Clone Wars mini-series that came out before Revenge of the Sith would be awesome.

What other ideas do you have?

Besides Shadows of the Empire, I'd like to see what happens after The Force Unleashed II

I'd really love to see something like a Netflix animated Legends series; it doesn't have to be canon, just clearly demarcated as "Legends", adapting the best storylines from across the old EU. I doubt we'd see anything like this for quite some time though, not until they've pretty much covered he whole timeline with canon stories; when they run out of room, this could be their "reboot' of the franchise (or "deboot' in this case).

Shadows of the Empire has always been one of my favourite EU books.

I think it could be incorporated into the new canon however I would want it placed elsewhere in the timeline.

I don't know how time officially passes between TESB and RotJ but it shouldn't be very long. More than a few weeks and Luke would surely have returned to Dagobah.

By far my favourite book is The Truce at Bakura. That could be incorporated into the new canon in it's entirety.

Weapons powered by souls and an army of dinosaur men. That is what I wanted in Episode VII (duel)

Honestly, it has been a while since I have read any of the Star Wars EU novels, having developed interests in manga, classic science fiction and Warhammer 40K in that period (I usually get through 3 books a week) so I am only able to recall a short number of titles.

However, any EU books that detail the formation of Luke's Jedi academy and how his apprentices fare would be pretty good.

If they do go with this, they should make aesthetic differences to give a greater sense of differentiation between this and the current canon; one idea could be to have any EU series be in black and white with highlights of only a few colours for stylistic effect. An example of this is the upcoming Angels of Death by GW. Love Blood Angels.
