Luke and Ezra share are the same age as well, not sure about the same day or not, but thus far it bore no real significance in the story. We don't really know whether 50 years means he shares a birthday with Anakin or not, we only know he is roughly the same age as Anakin would be. I think the general timeline is important, and likely important because we do not know the history of the Yoda species at all. Its possible and indeed likely that his birthdate is significant not to some event we already know, but some event that will be revealed to us later.

If I think about where the series goes, I've aways believed they were not interest in Baby Yoda per se, but interested in getting something from him to help them clone force sensitivity, since we know that Palpatine struggled with that already.

Just a clarification; I said "birthyear" not "birthday". There is no indication thus far that Anakin and The Child have the same birthdays. They do, however, have the same birthyear (assuming the information given in Season 1 is actually correct, but we have no reason to doubt that at this point).

Also, the difference between the Luke & Ezra case (whose similar age doesn't mean a thing) and Anakin & The Child's shared birthyear (which could possibly mean something) is that L&E do not have mysterious origins while A&TC certainly do. While it is entirely possible that the two mysterious 41 BBY origins are completely unrelated, it is similarly possible that there's an as-of-yet unrevealed plot point there somewhere, somehow.

So @remiel6 and @Angelman let me sum up :
    - according to Ki Adi Mundi in TPM "Sith are extinct since near one thousand years", and according to Yoda in ROTJ: "I am near 9 hundred years old"... well, with some acceptance, Yoda was born when Sith were dying
    - according to The Mandalorien, The Child was born when Anakin was born, i.e when there was some Force feedback to the Sith deeds...

==> it seems that the Yoda specie is very linked to Force jolts...

the issue here is that the Jedi were wrong, the sith were never extinct. Therefore everything they know about the sith is wrong, they are missing almost a thousand years of history. Now there likely is a connection between anakin and baby Yoda. The Jedi didn’t find either one. They were both likely made by the sith

This sorta ties into the speculation that Anakin Skywalker was a genetic experiment of Palpatine, in which there is strong evidence on both sides.
Concerning The Child, I think it would be neat if he was another failed experiment at manipulating midichlorians to generate life (one of Palpatine’s mysterious trials for learning to live forever.)
This train of thought can lead us to some really whacky territory: is The Child the true chosen one, not Anakin? Does Palpatine know about the whereabouts of yoda’s species? Was experimenting with infants a regular part of his science experiments? The possible speculation is endless.

He could have used some dna from yaddle and yoda to create another "chosen" one as a backup. Do the opposite of what was done to the clones and let the child grow slower, so that you have a backup if 50 something years later you find out that your "plan a" failed or succeded and he killed you and you live now in him right in time to pick up the child as new padawan apprentice
