Ahsoka was never a Jedi since she did not pass the Jedi Trials. As for Kanan, a strong argument could be made that he is a Jedi as can be seen in the exchange he has with Yoda in Star Wars: Rebels episode, "Path of the Jedi":

"Star Wars Rebels: Path of the Jedi (#1.9)" (2014)
    Yoda: Changed, something has.
Kanan Jarrus: I've taken on an apprentice.
Yoda: An apprentice? And now Master, are you?... Of this decision, honest you must be.
Kanan Jarrus: ...It's true. I'm not sure of my decision to train Ezra. Not because of him or his abilities... because of me, because of who I am.

    ...
Yoda: A dangerous time this is for your apprentice... for you.
Kanan Jarrus: I know. I can sense it. I feel as if his abilities are growing faster than I can teach him.
Yoda: You sense... or you feel?

[In my view, a plausible interpretation of these passages suggests that Yoda considered Kanan to be a Jedi and moreover, a plausible interpretation of the episode itself suggests that Kanan was undertaking his Trials in the temple. Anyway my two cents.]

As much as I'd love for Donnie Yen to be a Jedi, it seems to me that this possibility would be difficult to reconcile with OT cannon and Gareth Edward's assertion that Jedi would not be around to save the day.

Not only don't I think he's a Jedi, I don't think he's blind, either. His lenses are not typical "blind" contacts or scleral shells like you would use in movies -- they're blue. Why would becoming blind make a guy's eyes blue? I suspect he was definitely blinded at some point...but these are false eyes. This is a galaxy where prosthetic limbs are fully functional and capable of feeling and where a liver can be regrown in a bacta tank...why would a soldier walk around without getting his eyes fixed?
