Call me mainstream... But the Binary Sunset, definitely. Makes me cry just by thinking about it.

    ESB:
This piece will always be my all time favourite. Ever since I was a kid I've loved every bit of this song. 0:00-0:39 I love the way this piece begins. This may have very well been the last time Han&Chewie could of seen Luke, with a short yet suttle goodbye, yet so emotional imo, with the rebellion in a desprate rush for last minute preperation to escape.
0:49-2:04 A very iconic, well known and powerful theme, gives me goosebumps everytime.
2:06-2:40 I tend to hum this tune quite alot. Has a very militaristic feel to it, im hoping we get similar stuff like this in rogue one.
    2:41-3:05 The.Tension.Is.Real
3:33 a personal favourite, happy tear.
4:02 All hell breaks loose. I find the piano pefectally matches up with the walkers here
4:30-7:36 Badass. The most exciting and heart pumping part of this piece, again I need stuff like this in rogue one. This song perfectly matches up with the battle of hoth, the song getting ever more desprate as the walkers reach their target, and finally the rebels find there weakness and a quick fanfare to let the audience know that there is still hope.
9:20, 10:39 and 11:09 are all parts that require no words.

I play this cut a lot. It has most of the motifs from the film, and I like the tempo they are played in.

This is going to be a long post. The music that John Williams has written for the Star Wars saga (not just the original trilogy) is fantastic. I mean, one of the things I was most excited about for The Force Awakens was the score!
Now, the Force theme is my favorite theme in the series (though I will admit that "Rey's Theme" is an incredibly close second*), so I would have to go with "Binary Sunset".

    Honorable Mentions:
"Main Titles | Rebel Blockade Runner" - A New Hope
    Need I say more?
"Tales of a Jedi Knight | Learn About the Force" - A New Hope
As I said earlier, the Force theme is my favorite and I love this orchestration of it at the beginning. The mystical nature of the Force is just wonderfully represented here.
"Chasm Crossfire" - A New Hope
This is here because of how freaking awesome the main theme is here. I mean, just listening to it right now made me start grinning and giggling like an idiot.
"The Battle of Yavin" - A New Hope
Part of the reason this is one of the greatest movie climaxes of all time is this. Especially once Obi-Wan's ghost speaks to Luke. There's a reason this film won Best Score.
"The Battle of Hoth" - The Empire Strikes Back
One of the things I love about both Empire and Jedi is how both the Battles of Hoth and Endor (which I will get to) have unique themes. And both are really good.
"The Imperial March" - The Empire Strikes Back
Do I even have to say anything? This is the theme for Lawful Evil from now until the heat death of the universe.
"Yoda's Theme"/"Luke's Nocturnal Visitor" - The Empire Strikes Back
I love Yoda's Theme and "Luke's Nocturnal Visitor" in particular. It's just such a wonderful theme. And the one part from the main track in question made me tear up in the Behind the Scenes Comic-Con footage for The Force Awakens last summer.
"Han Solo and the Princess" - The Empire Strikes Back
While "Across the Stars" is amazingly beautiful, I prefer this. Mostly due to the intimacy in it as well as the sweetness to it. It just fits my romantic ideal better, I guess. And hearing it again in The Force Awakens just made me swoon all over again.
"Yoda and the Force" - The Empire Strikes Back
Mainly due to the scene as it is one of my favorites in all of storytelling. "Luminous beings are we, not the crude matter." And this music just sells it more.
"Lando's Palace" - The Empire Strikes Back
I just love the theme for Cloud City. "Move along, move along."
Everything from the end of The Empire Strikes Back (the duel, the escape, the end)
That is a flawless stretch of music. From the wonderful renditions of "Han and the Princess" to the entire duel between Luke and Vader (some of which was echoed in "Anakin vs. Obi-Wan" in Revenge of the Sith) to the the final scene is just fantastic, absolutely fantastic**.
"Approaching the Death Star" - Return of the Jedi
Just a great rendition of the Imperial March. Also, fun fact: the soundtrack (full track name "Main Title | Approaching the Death Star | Tatooine Rendezvous") has music not heard in ANY version of the film. It was actually from the deleted Lightsaber scene. I didn't realize it until I owned the Blu-Ray.
"The Pit of Carkoon | Sail Barge Assault" - Return of the Jedi
That anticipation music followed by a wonderful rendition of the main theme is fantastic. I love that scene.
"The Emperor Arrives" - Return of the Jedi
I love this part. Not only do we get a bombastic orchestration of the Imperial March, but the Emperor's theme is amazing.
"The Emperor's Throne Room" - Return of the Jedi
I love the Emperor's theme. It's so wonderfully ominous and dark.
"The Battle of Endor I" - Return of the Jedi
I mentioned before how I love the theme for the Battle of Endor. It is just great.
"The Battle of Endor II" - Return of the Jedi
Mostly due to the final part of the Luke and Vader duel. It is one of the reasons that this particular duel is my favorite in the whole saga.
"The Battle of Endor III" - Return of the Jedi
Again, mainly for one part: the sad, melancholy orchestration of the Imperial March after Anakin's death is great.
"Light of the Force" - Return of the Jedi
Again, another wonderful version of the Force theme, this time over the funeral pyre for Vader's armor, the last time we would see it for 32 years.
"Victory Celebration" - Return of the Jedi (Special Edition)
Not that I hate "Yub Nub", but I really do like this track that was added back in 1997. It's still really good.
"End Titles" - All three films
I love the end credit suites of all of the Star Wars film. From the bombastic main theme to the wonderful way they ended until The Force Awakens (though I loved that as well), they are always a great listen.

*Which is good considering I love how they flowed together at the very end of the credits for The Force Awakens.
**No, I totally wasn't channeling the Ninth Doctor. No Eccleston there. Not at all.

All of them. I can listen to all the songs Williams has composed and recall (wit particular detail) what is happening and what line is being said during all of them. Binary Sunset is up there, and the imperial march. The main theme, Han Solo and The Princess. The song when Luke is beating the dosh garn poop out of Vader, and Yoda's theme. The Asteroid Field. The Enperor's theme. The Battle of Endor song (that ending is AMAZING). Smaller songs I like are the variations on their themes when Yoda and Vader die.

    And of course, Yub Nub

Yeah I can't choose. All of them it is

My favorite overall soundtrack is ESB because it is really rich with themes. There is a droids theme, there's the Yoda theme, the Imperial theme, the Han and Leia theme...

Cue-wise, I really like the battle cues, especially the snow battle, the 3 cues that make up the Battle of Hoth.

But, one of my favorite things that John Williams does:
When Luke is on Bespin, instead of using the Luke theme, he starts using the Yoda theme for Luke. This is brilliant because one layer of meaning is saying that Luke is carrying on Yoda and his teachings to a new location, and on another level he is using Yoda's theme in place of the Force theme, showing the character development of Luke: the teachings of Yoda about the Force, self-control, and balance are on the forefront. It’s a small moment, but really shows off the nuance of meaning that Williams is able to achieve. (ref 01:38:12 in the despecialized edition)

    These are my favourties:
    Binary sun theme

Luke vs Vader theme (The Battle of Endor II)

    Victory Celebration

But all the Star Wars soundtrack are fantastic masterpieces. From the opening title till Vader's theme... Ageless classics.

My favourite piece. Maybe the chemistry between those two helped a lot.

"Victory Celebration" makes me feel nostalgic. I know it was added until 1997, but it makes me think of the eighties.

Love the End Titles, but my favourite one is "Rebel Fleet/End Title".

Yeah, I love that music. It's amazing how the score itself manages to tell so much of a story, and through the music alone you can hear battling, sorrow, and anger, but you can also hear that good/hope is in there somewhere. It really conveys the gravity of a final battle.

But I also like The Imperial March and the main Star Wars theme... so hard to choose.

Binary Sunset for the light side. Imperial March for the dark side (obviously).

Wow! Three pages and three years on and no love or mention for "The Throne Room" from the final ANH ceremony scene?!

Even now it still catches that sense of elation and exuberance of Star Wars more than any other piece of music I think. The greatest finale of them all!

Something that it took me decades to notice was that the galloping music heard during the escape from Bespin in the Falcon ("Hyperspace" on the OST album) is the same galloping music played in the scene when Rogue 2 is searching for Han and Luke on Hoth.

Am I wrong, but didn't ESB win an Oscar?
