Shouldnt maul have dominated or made it a bit more one sided?

Maul WAS (kind of) dominating at first with Ashoka just being trained enough to be able to survive. Maul's style comes from a place of anger and hatred, and the more frustrated he got he became extremely sloppy. You could even tell from the way he was yelling/rambling after he was captured

Nah, I thought it was a well balanced fight.

He had Ahsoka on the defensive a lot of the time and even managed to knock her lightsabers out of her hands a few times. But as usual, Maul let his fury get the better of him leading him to be sloppy and careless. In this particular fight, however, he was already mentally distressed which certainly didn’t help.

Another important factor is that Maul was trying to turn Ahsoka to his side, just like what Kylo was doing with Rey in TFA.

And let us not forget that Ahsoka was also trained by the Chosen One himself, Anakin Skywalker. She’s also fought in multiple battles and against many powerful enemies, including General Grievous, Cad Bane, and Asajj Ventress. For these reasons alone, it makes more sense for her to “beat” Maul than it did for Obi-Wan to have done the same thing in Episode 1.

At the end of the day though, none of this lore really matters as much as Ahsoka needing to essentially win to keep the story going where it needs to. Not to mention that it’s far more satisfying for the audience to see the hero come out on top, especially since said hero is about to go through hell the next two episodes.

Yah i guess maul wasn"t trying to kill her, but also i think it"s because of his descent into insanity. IDK, but i usually classify it as TCW Maul being at his prime after sidious killed savage and he got a momentary amp. After that however, he gets tortured at stygeon prime and he see order 66 coming and goes crazy like when he had spider legs, and that's how kanan f u c k s him up, because he is insane and not focused.

I think Maul accepted the will of the force. He believes strongly that the force generally controls fate.

My take on Maul anyway. After being abandoned by his master. While still malevolent, Maul began to understand his fate is controlled by the will of the Force. I see him trying to figure out where he fits into the will of the Force. He seems to think he and Ahsoka have a role to play together.

That role maybe more grey than light or dark.

Obviously because she was taught by Anakin.

Well, even being taught by Anakin, Ahsoka would not have beaten Maul in his prime. Luckily, after Stygeon Prime, Maul started going crazy, and his lightsaber skills decayed. Then Ahsoka wins! :)
