    Probably some fish-like creatures, similarly to puffins. And their relation with the Caretakers - this where I extrapolate based on the few information we have. Porgs are an integral part of the fist Jedi Temple Island, and since Skellig Michael, the real-life location on which Ahch-To is based, is both an old monastery and puffins' breeding site, it is twice as protected, therefore the Caretakers do take some care after Porgs as well.

    Monks were able to live on Skellig Michaeln for a couple of centuries by growing vegetables and eating fish. I think that the Caretakers with their smaller size and probably smaller daily energy requirement from a normal human do just fine.
