These are what I consider to be the most essential episodes of the Rebels animated series in order to understand how everything fits within the overall Star Wars universe, for those who do not have the time to watch all four seasons.

    ...............

Rebels takes place after the prequels, just before and leaning up to the events of Rogue One and the Original Trilogy.

Some of the initial episodes may seem slow, but this series introduces all new main characters and does not have the benefit of featuring characters already established in the movies.

    ...............

    S1E1, S1E2 Spark of Rebellion
Introduction to Ezra Bridger and the crew of the Ghost.

    S1E6 Breaking Ranks
Ezra goes undercover at the Imperial Academy.

    S1E8 Empire Day
    S1E9 Gathering Forces
Ezra learns more about what happened to his parents.

    S1E15 Fire Across the Galaxy
Season one finale and more information about certain characters.

    ...............

S2E1, S2E2 The Siege of Lothal
The Empire launches a campaign on Lothal. A few characters from the original trilogy make an appearance.

    S2E3 The Lost Commanders
The crew encounters a group of clone troopers from the Clone Wars.

S2E10 The Future of the Force
    A confrontation with the Inquisitors.

S2E13 The Protector of Concord Dawn
More about Sabine and the Mandalorians.

    S2E13 Legends of the Lasat
More about Zeb and his people.

    S2E15 The Call
Ezra's connection to animals and nature is an important part of his character.

    S2E16 Homecoming
More about Hera and the Twi'lek people.

    S2E18 Shroud of Darkness
Visiting a Jedi Temple on Lothal where they have Force visions.

S2E21, S2E22 Twilight of the Apprentice
Multiple characters and stories converge around a Sith holocron with an eventful confrontation.

    ...............

    S3E1, S3E2, Steps into Shadow
The Bendu and Thrawn join the series.

    S3E5 Hera's Heroes
    Thrawn invades Hera's home.

    S3E15 Trials of the Darksaber
    S3E16 Legacy of Mandalore
More on Sabine and the Mandalorians

    S3E20 Twin Suns
    Maul is obsessed with Obi-Wan.

    ...............

    S4E1, S4E2 Heroes of Mandalore
The Mandalorian storyline comes to a climax.

S4E3, S4E4 In the Name of the Rebellion
The Rebellion grows on Yavin IV.

    S4E10 Jedi Night
The crew attempt to rescue Hera.

    S4E12 Wolves and a Door
    S4E13 A World Between Worlds
Ezra enters a very special Jedi temple.

    S4E14 A Fool's Hope
S4E15, S4E16 Family Reunion and Farewell
Storylines come to a close while new ones are alluded to with a touching epilogue regarding the characters.

    ...............

Please comment with any episodes I have missed. This is just meant to be a bare minimum for those who may not be able to find the free time to watch all four seasons but would still like to experience Rebels. It's a great show, and gets better the more you watch. Hope you enjoy and may the Force be with you!

@Rodney-2187 You have read my mind....I did not catch all of the Rebels episodes and with the announcement of a follow on series, was looking for an essential list of the first couple seasons! Thanks!

    Great list! :D

There are quite a few appearances from characters in the OG and Prequel trilogies. Several of them have small story arcs, and others are just easter-egg or cameo appearances. If you're interested in seeing some of these characters just for funsies, you can find these guys peppered in throughout Star Wars Rebels, and I'd be glad to try scrounging up an episode list if anyone is interested:
    • Bail Organa
    • Lando
    • Leia
    • Luke
    • Mon Mothma
    • Obi-Wan
    • R2D2 & C3PO
    • Wedge
    • Yoda

    • * Kylo and Rey make a vocal appearance in one episode
The only other episodes I highly recommend are those involving Maul. There is a lot of speculation that he will return to Star Wars in live action, because the character continues to gain popularity and make appearances in new canon material, such as:
    • ***Star Wars: The Clone Wars (major story arc)
Although technically removed from the canon timeline after Disney acquired Lucasfilm, several elements used in TCW series were carried over into Rebels. Concerning Maul, he took possession of the Darksaber in TCW (no longer canon) and it was stolen from him (or his residence on Dathomir) in Rebels (new canon). So his presence or historical ties to Mandalore are likely still relevant, even if no longer technically present in canon material.

    • Solo: A Star Wars Story (cameo appearance)
Maul's cameo in Solo takes place around 10BBY. Noteworthy is the fact that he (presumably) still had possession of the Darksaber at this time because he acquired it in 19BBY and it was not stolen from him until 2BBY. And yet he has a new red (sith) saber in Solo as opposed to the Darksaber. Hmm...so we still don't know why he stashed the Darksaber away in favor of a newly designed double bladed saber.

    • ***Obi-Wan Series (speculation)
Set to take place around 10 or 11 BBY. I think this is worth mentioning because Maul is still alive at this time, presumably running Crimson Dawn, and Obi-Wan is his arch-nemesis. We just saw Maul's pretty face in Solo at this exact point on the SW timeline. Coincidence?

    • Star Wars Rebels (major story arc)
Maul's appearances in Rebels span from 3BBY - 2BBY. There is a lot of missing backstory between 19BBY and his reemergence in 3BBY. Most noteworthy for the sake of this post is the fact that Maul was in possession of the Darksaber (newly emerged in the Mandalorian) between 19BBY and 2BBY.

    • ***The Mandalorian Series (speculation)
As previously mentioned, elements of Maul's history with Mandalore and the Darksaber are present in new canon material (Rebels). We've seen at least one Mandalorian character in this show with a horned helmet (a style that emerged during Maul's rule of Mandalore, worn by his super commandos). So although TCW was technically removed from canon after Disney's acquisition, I think it's safe to say that his stint on Mandalore is still relevant, and he was the leader of Mandalore at some point.

    • And finally, the actor who portrayed Maul in the Prequel trilogy is all-about-it. He still practices his lightsaber skeelz on the regular and he's still highly enthusiastic about reprising his role as Maul.

    • Just....so many intersecting plot points with Maul right at the center. I think he's an important part of Star Wars right now, and therefore likely to reemerge in due time.
    Sincerely Maul's #37429479328429 fan. :D

Anyway, TLDR, here's Maul's episode list:
    • S2 E21-22: Twilight of the Apprentice
    • S3 E3: The Holocrons of Fate
    • S3 E11: Visions and Voices
    • S3 E20: Twin Suns
