    It's a bit late but today's lunch was homemade Vegtable Soup (Tomatoes, Carrots, Celery, Courgette & Leaks) also some pasta. & I made enough to last me till Friday.

    LOL, Click-bait drives me nuts. In context "The National Science Foundation is spending roughly $175,000 on an anti-obesity study that involves taking pictures of food before obese people consume it.". All things said, that is a tiny amount of money to spend on a study than the government typically does and the outrage should be that the gov't is STILL trying to get up into your personal choices.

    I have had a pretty big cold the last couple of days and have only ate some taco bell and freezer food because I was not up to cooking. Today I am good although stuffy, but was hungry for real food, so I just made this.


    Ground Beef Hash.

    Diced potatoes (skins on), diced jalepenos (they were pickled type) and tossed in some seasoned ground beef. I love these types of meals because they are very modular and can be fixed with whatever you have on hand or want to put in it depending on your tastes. Since I was only making it for me, I got to leave skins on (Mrs Savage likes them peeled) and I got to add jalepenos. I would have added onion and peppers as well, but did not have any on hand.

    Now I am enjoying it while I finally get to listen to @John Hoey and the Resistance podcast.

    I had a pair of brats leftover from last night so I did something similar to my breakfast the other day. I diced them up, tossed them in with diced taters and diced jalepenos. Salt and pepper to taste. Guuuuuud.

    That is Better'n just Good (I'd put onions 'stead'a hot peppers).

    Much of what I make an' like is, as ya say, low rent.

    Depression era recipes.

    Mac-n-Cheese is one.
    I add chopped're diced up ham an' onions = Ham-n-Cheese.
    Or can do it with chicken or sausage.

    I'll fry up half pound'a bacon an' fry up taters-n-onions with garlic in the grease, throw the bacon back in... eat right outta the skillet (I use my cast iron, yunz all seen in former posts).

    Ideally I would have added diced onion, diced peppers and maybe even some mushroom, but I was working with what was on hand. I do have a small onion, but it is going toward tacos this weekend. WOOOOOOOO!

    JAWA SOUP

    Ingredients

    • Olive oil spray

    • 1 brown onion, finely chopped

    • 1kg carrots, peeled, coarsely chopped

    • 1L (4 cups) Massel chicken style liquid stock or vegetable liquid stock

    • 1 orange

    • 2 tablespoons fresh continental parsley leaves

    Select all ingredients
    Method
    • Step 1
      Heat a large saucepan over medium heat. Spray with oil. Cook the onion, stirring occasionally, for 3 minutes or until soft. Add carrot and cook, stirring often, for 5 minutes or until just soft.
    • Step 2
      Add stock. Bring to boil. Peel 2 strips of rind from the orange. Add to pan. Reduce heat to medium-low. Simmer for 20 minutes or until carrot is tender. Remove and discard orange rind.
    • Step 3
      Set aside for 5 minutes to cool. Use a stick blender to puree until smooth. Juice orange. Add to soup. Place over medium heat and cook for 2 minutes or until heated through. Top with parsley

    I love it! That’s a fine recipe my friend. Especially with the orange taste for the special kick.
    • It’s easily made.
    • It can easily be modified (e.g. adding a bit of ginger to taste I can imagine).
    • It can be pre-prepared.
    • It can be frozen for later uses.
    • Children will eat it.
