    You’re killing me – so delicious! I’ll go for the Calamari and the Gambas, yumm!

    For last night’s dinner, the re-warmed leftovers from the last BBQ had to do for me. As there were no veggies available whatsoever, accompanying was something made out of barley and hops: a fine Farmhouse Ale.

    Lecso lovers anyone?

    I love it because you can combine it with..
    bulgur
    couscous
    rice (all kinds of)
    noodles (all kinds of)
    polenta... all veggie ..

    .. but also with ..
    meat (all sorts of)
    fish (all sorts of)

    My personal favorite:
    lecso with a self catched all natural river fish filet in roasted in a frying pan over open camp fire with lecso made of loads of fresh paprica, tomatos, onion and garlic with olive oil and hungarian paprica powder and some colourful pepper from your favorite pepper mill...
    mmmhh :D

    I never had this, although it’s quite common in the area my wife is from, most probably an eastern bloc relict from cold war times. But since the wall fell, you can also get it here.

    Back then, many prepared it themselves by growing the needed vegetables in their own allotment garden, as not so much was available in the stores. So they could cook Lesco to preserve the harvested veggies and store in in jars on a shelf.

    I’m actually wondering right now, what kept me from trying it when the mixture surely would match my palate. I enjoy a good Hungarian Goulash or Pörkölt too. Which gives me some ideas for the upcoming weekend…

    I’m a big fan of Spanish and Portuguese cuisine, especially with tapas and seafood in combination with olives, garlic, lemon, fresh coriander and other herbs and spices. Looking forward to the business trip in September to Hamburg, as there’s a good number of decent restaurants in the Portuguese/Spanish quarter near the harbor.

    Guys, here’s todays challenge: I’ve to put together a translation of tomorrows dinner menu for some guests from Vietnam. But as there are many German specialties involved, I’m not quite sure about a good translation that does the job. Here’s my try so far, and your ideas are very welcome indeed!
    1. Brot mit Griebenschmalz
    2. Hochzeitssuppe
    3. Spanferkel mit Sauerkraut und Kartoffelpüree
    4. Rinderroulade mit Rotkohl und Knödeln
    5. Spargel mit Schnitzeln und Bratkartoffeln

    Thanks mate, that was the hardest part to come by with. At least the google images search comes up with some good results for ‘crackling fat’ although Wikipedia goes with this lard thing, but “Grieben” are the challenge here I guess (as in lard with greaves or lard with cracklings).

    I often reduce the quantity of dishes just to cook with enough butter (=fat). Why? For the extra plus in taste.
    Fat is the best interface to really get the aromatic essence of all kinds of food in your mouth :D
