    Also, here's another brunost tip. The next time you make tomato soup or gravy for a meat dish, melt in 3-4 slices of brunost for a richer taste :)

    Stuck inside on a rainy fall day has me wanting more soup. I did the same as above except I used butternut squash with vegetable broth this time and added potatoes and corn. Topped with basil at the end instead of cilantro. Thought about using rice and broccoli. Maybe next time.

    While returning from my short trip of Leipzig, I got stranded for quite some time at a train station in Berlin, thanks to the fabulous German rail road service.

    But it gave me the chance to pick up a real typical German fast food in it’s version from Berlin (which is claimed by the inhabitants there that this is the only true and original version). This Currywurst menu included to sausages, one within a sausage casing, and one casing-free. Both were kind of deep-fried, which actually IS unique.

    I never had this variant before, but actually, it was quite tasty. So if you;re visiting Berlin, try this out!

    Made a deep dish pizza in my cast iron skillet. Never tried it before. A seasoned cast iron skillet is one of the best things you can ever have in a kitchen.

    And now for something completely different!

    Onderon Stir Fry

    Makes about 4 portions

    INGREDIENTS

    For marinading the meat
    • a pinch of salt & pepper each
    • 2 tbsp light soy sauce
    • 1 tbsp Shaoxing rice wine
    • 2 tablespoons sesame oil
    • 1 egg white
    • 4 tbsp. cornflour

    For the sauce
    • 3 tbsp light soy sauce
    • 2 tbsp dark soy sauce
    • 1 tbsp hoisin sauce
    • 1 tbsp cane sugar
    • 1/2 level teaspoon salt
    • Optional: 1 tbsp red bean paste with chili, if you like it a little bit more spicy
    • 3 tbsp Shaoxing rice wine
    • 100 ml chicken stock or water
    • a slurry of 2 tbsp cornflour mixed in a 1/3 glass of water

    For frying
    • 250g (1/2 lbs.) rump steak
    • 250g (1/2 lbs.) chicken breast
    • 1 large onion, cut into strips
    • 4-5 cloves of garlic, coarsely chopped
    • 4 slices ginger
    • A dash Shaoxing rice wine
    • 200g (1/2 head) broccoli, in small florets
    • 100g (1-2 cups) carrots, thinly sliced or julienne
    • 150g (two handful) mushrooms, quartered
    • 1 red/yellow pepper, in bite-sized stripes/dice
    • 3-5 splashes of water
    • 1 tbsp roasted sesame oil, to flavor
    • 1 handful of cashew nuts
    • sunflower or any other vegetable oil for frying

    PREPARATION

    Cut the chicken into mouth-sized cubes, put into a bowl.

    Cut the beef into thin slices across the fibre and diagonally to the piece of meat, then plate once with a knife or hatchet. Put into another bowl.

    Add each with a pinch of salt & pepper, half an egg white, the wine just for the beef, 1 tbsp. light soy sauce, 1 tbsp. oil and 2 tbsp. cornflour.

    Mix thoroughly (!) by hand (wear rubber gloves if necessary) until everything looks smooth. It should have a silky covering. Allow to stand for 30 minutes or longer.

    In the meantime, mix the sauce with the ingredients in a bowl.

    Clean the vegetables and cut them into small pieces.

    Toast the cashew nuts in a coated pan.

    Let a wok (or suitable skillet) become very hot, heat some oil and add the chicken, fry it until it is well cooked. Take it out of the pan and keep it warm at about 60-70 degrees Celsius (140-160 Fahrenheit).

    Add some more oil if needed, in with the beef and spread well. Brown from one side until it has slightly taken on some color, swivel briefly and take out, the beef should not be overcooked. Keep warm too.

    Add another dash of vegetable oil to the hot wok, immediately add garlic, ginger slices and onion and fry until they slightly take on color, but do not burn. Be careful, this can happen quite quickly!

    Deglaze with a dash of Shaoxing wine and immediately add broccoli and carrots and sauté briefly. Add a dash of hot water to cook the vegetables.

    When the water is gone, add the bell pepper, again sauté, add another dash of water, and continue cooking. Add the mushrooms, simmer and stir again. If necessary, add more water until the vegetables have reached the desired cooking degree. Depending on the thickness of the pieces, this can take a while and requires some dashes of water and preferably a lid on the wok!

    When the vegetables are cooked but still crisp, add the meat and pour on the sauce, bring to the boil and stir well. If you get the impression that it is not enough sauce, simply add a little more water, the whole thing is salty enough.

    Carefully thicken with the water-starch mixture by the spoonful until the desired consistency is reached. Stir in the toasted sesame oil.

    Remove the ginger slices at the end. I did it this time because not everyone at the table liked a pronounced ginger note. Alternatively, a walnut-sized piece of ginger can be chopped and processed just like the garlic.

    Top the finished dish with the cashew nuts. Onderon Stir fry - done!
