I've seen the OT five or six times and I only just realized that the Cantina is in Mos Eisley. I thought it was in Anchorhead.

What are some things you didn't catch right away when watching the movies?

Even though i watched it for the first time when i was 6 or 7, there are several things i never caught in AOTC until i was 12 or 13 (when i started to become a true fan) like Boba actually being a clone of Jango and not his son and for some reason i also used to think that Sifo-Dyas and Qui-Gon Jinn were the same person. Now I know I should blame George Lucas for his writing :D

It wasn't until Attack of the Clones was about to come out that I finally even gave the slightest bit of attention to Obi-Wan's mention of the Clone Wars in A New Hope (about 5 years time from first seeing A New Hope to this).

It wasn't until I first saw the Special Editions (circa 2004, 2005) that I noticed the Stormtrooper hitting his head in A New Hope.

It had to be pointed out to me that Luke missed this kick by about 12 parsecs:

I blame the Fett man for this.

My four-year-old self had seen it more than that!

it's been too long since i first saw the OT to remember what i missed, but as a young child, i'm sure there was tons that went over my head originally.

the only thing that comes to mind distinctly is all the clues that indicate that Lando has sold them out.
watching TESB now it seems so obvious that Lando is setting them up, but when I was a kid I was shocked and appalled in my naivete.

not quite a "didn't catch it thing" but when ANH was finally available to watch on VHS, i'm pretty sure my brothers and i wore out the tape watching the cantina scene over and over to look at all the different aliens (who all had stupid names back then like walrus man and hammerhead and snaggle tooth ~ ha!).

Even with that loud *THUNK* ?? You'd think if they were trying to make that mistake not as noticeable that they would remove the sound effect... Hahaha honestly this was always one of my favorite parts. It's the little things in life..

Um...they ADDED the sound effect in the Special Edition (in the theatrical edition, there was nothing). That is why I finally noticed it.

While there are a ton of things, I'll just stick to a few from ROTJ.

I had seen the movie a bunch of times as a kid and not once did I notice Amanaman till this came out:
    jabbadungeon-potf-front.jpg
After that I made it my mission to find him in the movie.

I hadn't noticed until after lots of viewings that Jabba had a nasty cut on his tail:

While I won't put up the pic so that nobody gets offended, it took me a while as a kid to notice that Oola's boob completely came out of her outfit when Jabba launched her to the Rancor pit.

In ROTJ Jabba grabs a frog in a bowl and it's animated, squirming to get away.
When Jabba drops it in his mouth it's switched to a solid rubber frog. I saw the truth in a behind the scenes documentary. But every time now I think, "so fake."

One thing I got wrong is that I thought Obi-Wan's ghost revealed Yoda's true identity to Luke. Yoda actually outs himself by saying something like, "I cannot teach him. The boy has no patience." Only then does Obi-Wan chime in with "He will learn patience."

I only just realized, and I mean just like within the hour, that Anakin's eyes can be seen turning brown to yellow while Obi Wan is giving his "You were the chosen one!" speech. It is pretty easily missed but you can check it out in the video.

around 9 seconds in to about 12 seconds

I don't want to sound rude but I spotted Ani's eyes on my first viewing, but hey gets me every time. Lucas is a visual director its a treat for the eyes no matter what ppl/bashers/haters say about the prequels. Bad films that I love and enjoy on my spare time.

Never noticed Han grab Leia's boob accidentally in front of the bunker in ROTJ until just this past year, and I saw it in the theater in 1983, so I can't say how many times I have watched the film.
