Should they make Rogue One 2 if it's a box-office smash?

I think having Spielberg direct and Lucas produce a spin off of high stakes issues betweeen episodes would work extremely well.

I think an obvious story would be about Sideous, plagueis and Anakin's origin. Perhaps mix in some early Yoda, Dooku, Siphodeus, Maz, Maul, Jin and Master Windu. They would not have encountered Sideous but they may have ran into Plagueis and his other apprentice. Lots of stories there.

As for the Feature films, they need to rebuild the Jedi and Sith perhaps delving into the History of both before having a major clash between the two again. Maybe an attempt to merge the two into what people call "grey" Jedi. Perhaps Rey and Kylo can attempt to combine Sith and Jedi religions/cults for awhile while leaving the political side of Star Wars to its own. Can't just keep telling same story of political fighting led by Dark and Light force users.

Actually, back in the day, long before anyone had ever heard the name "Jar Jar", I had always thought it would have been cool to begin a prequel series with a "Seven Samurai" derived story like the one you suggest, in much the same way that ANH was built on elements of "Hidden Fortress".

Much as I liked the episode, I was a bit disappointed when they did the "Seven Samurai" thing in season two of the Clone Wars series. I'd have much rather seen that homage done as a full movie.
