    that's a good question...furthermore how the hell does someone elect a princess. they live in a weird combination land of monarchy and democracy.

    Well, in many places (films, TV-shows, news programs, newspapers, etc...) I've seen ex-presidents of the USA are still named as "Mr. President" when they aren't anymore. I suppose it's sort of a honorific title.
    And regarding elected monarchies, I think they are some real (if unusual and scarce) examples in history.

    Exactly. We're not to actually know if she still carried the title "Princess" or not. If so, it may be purely symbolic and left to her as a respectful gesture.

    You don't necessarily lose your title just because your land is gone. I think the King of Greece, exiled in London, is still called "King"?

    Also, SW is legend/fable, and Leia plays the role of "The Princess" :p She is the once and future princess, for sure ;)
