Although I personally consider a role in Star Wars to be the ultimate honor in acting, Ian McDiarmid is a Shakespearean actor with a masters degree and a Tony. Some people in a position like that might consider Star Wars to be “beneath them.”

I looked through a lot of interviews to try to figure out what Ian McDiarmid thinks of Star Wars, but I haven’t exactly found a direct answer to this question.

It’s a good sign that he came back for the PT, then came back again for the ST, and then
    came back again for Obi-Wan
, but to be honest, it is also possible that this was motivated by the money.

Does Ian like Star Wars and playing Palpatine?

This short clip from the SWC should answer your question:

But fun beside, Ian McDiarmid once said he doesn't want anyone else to play Palpatine and that he is proud about this character. So yes, he likes playing the emperor.

Honestly, I feel like he seems to enjoy his role more than many other actors in the series.

I really think he enjoys playng the character. He is always in conventions around the world, signing and taking pictures with the fans.

I think he 100% loves playing Palps. The interviews that I've seen him in, he seems to be genuine when answering questions about the role. The detail that he goes into about his personal experiences on set, different conversations that he had around that the time of filming and releases, I've always seen him as very humble when speaking about his time as Palps. I don't think Star Wars is beneath him, I think he looks at this just like you do...The Ultimate Honor in Acting. I think Christopher Lee (Count Dooku) believed the same thing and he has a very prestigious acting/stage acting career and knows his Star Wars role was one of his highest accomplishments.
