Qui-Gon Jinn was mine. He was (in various Legends writings) referred to as one of the "Grey Jedi" as he skirted the edge of the rules and on several occasions directly defied the Council in order to use his own means to reach an end.

He was a rebel that knew the rules, and willingly broke them as a shortcut to resolve a situation and it really irritated the council but they used him when his tactics would usually conclude a situation....and they likely KNEW that he was going to break the rules but they seemingly looked the other way without directly condoning it. :)

Jango Fett. He was a simple man, trying to make his way in the galaxy. But even without the Legends material of him leading the True Mandalorians, his code of honor, his hinted-at history with Cad Bane, his sharp shooting and physicality all make me wish he clawed out Mace's eye or something before dying. Now, if his old history is reworked like Depa Bilabba's, having the concept there but a newer and streamlined story, he really would cement himself as the most gray character of the PT. He did it for money, he fulfilled his clients wishes to his death, and he was the first real Bounty Hunter who fought with guts and intelligence in the movies. YES, even Boba didn't fight like Jango, but I view him more as a smarter, stealthier man than Jango.

I'd have to say Maul. He was a badass! (dual) I still wish he had been in the movie longer.

I'm gonna add Cad Bane and Luminara to my list of favorites. Cad Bane is, well, a big guy, and I have a lot of admiration for Luminara.

JarJar took all protagonism as a CGI character in The Phantom Menace (and the Gungan wasn't very popular...). I think Watto was an incredible character that hanldes the pass of Time really well. The design was good, the character was goofy and funny, and Rob Coleman did a wonderful job animating it. For me, the most believable character of the trilogy so far.

Qui-Gon Jinn. Would love to see more of him and while he achieved what his character was intended for, he was 1 of the few interesting characters.

Other than that - Maul. Obviously.

Grievous is the worst. Unnecessary, Lucas just added him to keep upping the Lightsabers. Dual -> two handed saber combat -> 4 light sabers. Weezing and huffing (I know that this was part of Clone Wars) his character could have been removed.

Qui-Gon Jinn was my pick as well.

He always seemed to me to be the quintessential Jedi who was more likely to attune himself with the Force than primarily with any artificial rule established by the Jedi Council.

In aligning himself with the Living Force and trusting his instincts, he actually practiced what he preached, and he proved to be instrumental in a way that ultimately positively affected the entire saga and lead to the fulfillment of the Prophecy of the One.

At the end of it all, Yoda and Obi-Wan Kenobi would become his padawans: the student became the master, and the Jedi Masters became the students, as Qui-Gon relayed to them, from the Netherworld of the Force, the secrets to becoming Force spirits...

Qui-Gon Jinn definitely. He pretty much embodies what I wanted from the Jedi.

“Be like water making its way through cracks. Do not be assertive, but adjust to the object, and you shall find a way around or through it. If nothing within you stays rigid, outward things will disclose themselves.

Empty your mind, be formless. Shapeless, like water. If you put water into a cup, it becomes the cup. You put water into a bottle and it becomes the bottle. You put it in a teapot, it becomes the teapot. Now, water can flow or it can crash. Be water, my friend.”

    ― Bruce Lee

When faced with changing circumstances, the Jedi rigidly held to their dogma and, in the end, were broken. If he stayed alive, Anakin might have turned differently due to Qui-Gon's compassion. At the very least, Palpatine wouldn't have such an easy way to manipulate him and Order 66 might not fully destroy the Jedi. I hope he is still around to whisper to Luke.
