Do you think the story would be more believable if TFA opens after a thirty year long peace since the fall of the Emperor?

Peace following Episode VI would make sure that the rebels' victory at Endor felt deserved and worth the fight; the Empire just getting on with it kind of doesn't gel with the finality of Jedi though I personally really liked to see the aftermath in, well, Aftermath.

Episode I started out with peace as well; though it was shattered a couple of minutes in.

On the one hand I feel that the ending of VI is diluted and spoiled because the celebrations are so massive especially in the Special Editions. Maybe Disney needs to re-release Jedi with Yub Nub - in the original version the celebration was a more modest one-planet affair. Also, no Hayden.

On the other hand, I realize Disney wants to capitalize on all us suckers, and a thirty year peace doesn't lend itself well to exciting novels, comic books, games, etc.

But the more I think about it, the more I feel I would be comfortable with VII opening in peaceful times, times of restoration, the Empire already a distant memory. Then WHAM comes Snoke snoking his snoke around the galaxy, surprising all with his snoke.

They could even "rhyme" with Episode III. Instead of opening the crawl with WAR! they could have...

PEACE!!1 It is a time of rebuilding. The Empire and its sinister leader are long gone.
The hero of the civil war, LUKE SKYWALKER, was last seen buying diapers on Chandrila, for an unknown purpose.

Meanwhile, PRINCESS LEIA has become the Chancellor of the restored REPUBLIC, and though it's a demanding job (obviously) she's able to juggle her professiona life with family life.

Having married HAN SOLO, she is now the proud mother of two, whoops, one, just one, child, but she didn't like life on Coruscant so she buggered off to some unknown desert planet, despite the irritatingness of sand getting everywhere. Everywhere....

We already know that's not exactly the case. The books (e.g. Journey to the Force Awakens series) make it clear that things weren't exactly peaceful for the last thirty years. I agree, the original ROTJ ending actually turns out better reflecting this IMHO.

Also, yeah, I hope we see Snoke getting snoked after snoking a big fat snoke...right before he says "There has been an awakening...have you felt it?"
Kylo: "Yeaaaahhh duuuude.....maaaan... I totally feel it."

Well I obviously know that the conflict rages on after Jedi, I was wondering whether you think it would have been a better idea - from a narrative point of view - to have the climax of Jedi usher in an era of peace, rather than filling the gap with a ton of books, comics etc to bridge said gap.
