    As much as I would love to see the Jedi KNIGHTS in flashing armor. The robes fit a number of other ideas that seem to fit their character. They have a vow of poverty going on. Fancy armor makes martial sense but something about them putting aside possession seems fitting. The Jedi at their ideal are peacemakers, seeking resolution and see violence as a last resort and even then only for defense. The use of armor or presenting a martial and "ready for battle" vibe goes against their ideals even if it would be cool. Lastly, "adventure, excitement a Jedi craves not these things." There is just something about their outlook that makes armor not fit as much. They are typically quick to say that they are guardians not warriors that can "fight a war for you." People in the Galaxy were expected to handle their own business. The Jedi pushed the will of the Senate which in theory was a majority of the worlds of the galaxy and went after those that were in opposition to the principals of the republic. They are kind of a UN security force. They get involved to see the rights of people are protected, and that the will of the Senate was addressed but they weren't intended to conquer or to occupy or assist a single faction against another unless one (or both) were in opposition to law.

    I had some problems with the robes, but not many. I mean, these characters aren't all human, so they must come from different planets, have different culture, etc. Ahsoka is a great example, as her clothing seems different, more culturally aligned perhaps. So if they were more stylized, then I could easily see why some Jedi had robes like Tatooine moisture farmers - it's just what they are comfortable wearing. And I know they come to train at a very early age, but clothing also is different in many cultures at a young age. As for armor, it only makes sense in war, and these Jedi are more of peace-makers, not war-makers.

    Also I think that George also was evoking Buddhist monks not just western monks.
