did Anakin only become a Sith when he protected the Jedi code

He did it for purely selfish reasons, not because of his devotion to the Jedi Code:

Mace Windu: [has Palpatine subdued] I'm going to put an end to this, once and for all!

Anakin Skywalker: You can't. He must stand trial.

Mace Windu: He has control of the senate and all the courts. He is too dangerous to be left alive!

Supreme Chancellor: [exhausted and disfigured] But, I'm too weak. Don't kill me.

Anakin Skywalker: That's not the Jedi way. He must live.

[Windu ignores Anakin, still intending to kill Palpatine]

    Anakin Skywalker: I need him!

    [Windu raises his lightsaber]

    Anakin Skywalker: NO!

Supreme Chancellor: [Anakin draws his own lightsaber, cutting off Windu's arm, then Palpatine electricutes Windu] Power, unlimited power!

The Light Jedi are stupid (Grey Jedi are another cup of tea) and suppress natural feelings like anger, and aspiring to make a mark on the galaxy.
So basically Anakin was sheltered a group of close minded zealots (Jedi Order) who could never live up to the great characters during the Galactic Civil War.

I often wonder if Vader had defeated Palpatine and taken over the galaxy, if he would be a more just ruler. He seemed to have a code, even with the force choking, and he was no Palpatine as far as character. Vader seemed to have more of a less aversion to non humans and also was a former slave. Of course, he still would have been a Sith, and a dictator, but would have have been more just?

Mace did not win a fight with Palpatine. Palpatine feigned in order to enlist Anakin's help. Palpatine could have easily defeated Master Windu. It was manipulations all the way.

I believe that Anakin did have dreams of becoming a "benevolent dictator" - in fact, I think Count Dooku probably also hoped to do something like that, which may be the reason he tried to convince Obi-Wan to help him overthrow Palpatine.

The problem is that the benevolent dictator model almost never works out in practice - "Absolute power corrupts, absolutely."

In order to make my point, I need someone to answer this question for me?....

DId palpatine know about Anikin before the Jedi discovered him in TPM?

If the answer is yes, then I feel he was doomed from the start. Yes, he made his own choices, but we all know that he was too old to start "traditional" Jedi training. If Palatine knew about him, it could be reasonable to say that he forced the Trade federation on Naboo in order for the jedi to find Anakin, but at an age that will hinder his training to become a light user.

If the answer is no, And I might get MAD crab for this, but I think Padme actually falling for him, was the moment he started turning Sith. He knew and even told her that he shouldn't be seducing her, but she let him and she fell for him. She knew just as much as he did that there was never going to be a happy ending if they went down that rabbit hole.

This is a good question, but I'm not sure if there is any definite answer. Palpatine was Plagueis' apprentice, and Palpatine is clearly aware of Plagueis using the Force to create life, which is the implied origin of Anakin Skywalker, so I would say that Palpatine was probably aware of Anakin, although it is open to interpretation.

I'm not sure how Palpatine could have deliberately planned for the Jedi to find Anakin. Tatooine was never their destination, and if they had made an emergency landing on any other planet, or made it back to Coruscant without incident, Anakin would've just stayed with Watto. I consider this to be related to a weakness of the prequels in general: Palpatine's plan is insanely overcomplicated and depends on multiple unlikely coincidences, yet somehow it works perfectly. I try not to harp on this too much, because I actually like the prequels and I don't want to be called a prequel-basher, but nonetheless the PT does have some components that are not as good as the OT.

Its a interesting question, I think the answer is at present we don't know.
If palpatine had orchestrated the blockades and invasions, I guess it could be two fold, it was the catalyst he needed to undermined the senate but here is no reason he couldn't have been also trying to find the chosen one.
