ANH: The WHOLE Cantina scene!
[Runner-up: "Now thats a name I've not heard in a long time..." Guinness's eyes and William's music makes this scene so evocative!]

ESB: THE Revelation... Unoriginal choice but I'd be lying if I said anything else.
[Runner-up: Vision in the cave on Dagoba.]

ROTJ: Vader turning on Palpatine... My favourite scene in the whole Saga!
[Runner-up: Luke and Artoo save the day at the Sarlacc pit.]

STAR WARS-----Cantina scene, and one scene that still makes me chuckle all these years later is when R2 is shot by the Jawas and falls down with a clunk like a trash can tipping over.
EMPIRE-----pretty much the whole thing--favorite scene is when Han gets frozen in carbonite, but my favorite single moment is when Chewie puts his head down on the ladder in sadness when the Hoth base doors are closed for the night (really the only time Chewie felt like an actual emotional being.)
JEDI------Luke, Vader, and the Emperor on the Death Star
TPM------the pod race scene I guess
AOTC----never seen it
ROTS----I've only seen it once but I remember liking the opera house scene and the Order 66 scene.

 

TPM: Qui-Gon's lightsaber duel with Darth Maul on Tatooine.
AOTC: Anakin and Padme's meadow picnic on Naboo. It's the only scene when they actually have any chemistry. (Runner up: Obi-Wan's fight with Jango Fett).
ROTS: Obi-Wan's lightsaber duel with Vader on Mustafar. ("You were the chosen one!")

ANH: Luke gazing across the sand dunes at the binary sunset.
ESB: Luke's lightsaber duel with Vader in the carbon freezing chamber.
ROTJ: Luke tossing his lightsaber and telling the Emperor: "I'll never turn to the Dark Side. You've failed, your highness. I am a Jedi, like my father before me."

 

TPM: That very specific moment when the second side of Maul's saber ignites.
AotC: Anakin Massacring the Tusken Raiders, coupled with the cut to Yoda hearing Qui-Gon protesting.
RotS: "You were The Chosen One!" - I tear up every time during this exchange.
ANH: The Binary Sunset - The score really sells this moment, it's my favourite Star Wars scene overall!
TESB: Come on, it has to be the big reveal. Anything else pales in comparison.
RotJ: That quiet moment where Luke gives his father a proper Jedi funeral. It's really very touching.

ROTS- Tragedy of Darth Plagueis the Wise, but Sidious wiping out three Jedi masters in the blink of an eye is often overlooked I feel

ANH- The Cantina Scene
ESB- Luke uses Force Pull for the first time on film
ROTJ- The Death of Palpatine

 

TPM - Duel of the Fates
AOTC - Obi-Wan getting the down low from Dex in the Diner.
ROTS - Opening Crawl (WAR!) straight through until the buzz droids show up. (This is the only one where I have almost a tie. Obi-Wan vs. Grevious is pretty darn cool).

ANH - Binary Sunset
ESB - Yoda messing with Luke and R2 at their camp site
ROTJ - Luke vs. Vader

 

TPM- When the blast doors open to reveal Darth Maul and we first hear the DUN DUN of the Duel of the Fates
AOTC- (if you're MAKING me pick one) the battle in the coliseum.
ROTS- Obi-Wan v. Anakin
ANH- Right as the Rebels begin the assault on the Death Star and the Music picks up as Red Leader says "Copy Gold Leader, we're gonna cut across the axis and try to draw their fire."
TESB- All of Luke's Jedi Training
ROTJ- Luke v. Vader in the throne room.

 

I have many different 'favorite moments', but...

TPM: The Senate scene (unpopular!).

AOTC: Shmi's death and Anakin's reaction.

ROTS: Anakin and Padme communicating/sensing each other across Coruscant.

ANH: The escape from the Death Star (post-trash compactor).

TESB: Han evading the Empire by parking the Falcon on the Star Destroyer.

ROTJ: The speeder bike chase.

ESB - Vader reveal to Luke.

ROTJ - The final push where Luke overwhelms Vader. (just after Vader threatens to turn his sister, and the music that accompanies that moment)
