    Greetings, Cantina mates!

    This seemed like the type of recipe some of you would like, so I thought I'd share it here. Very simple. Very easy. Not the healthiest on its own, but if you eat some vegetables or a salad and use this recipe in moderation, you'll be okay. I used it as my post-workout meal tonight. lol, cause it's got lotsa good stuff for testosterone.

    So what is it? 3 eggs, 2 potatoes (diced and cooked in olive oil), and a bacon-wrapped smoked sausage.

    Nutritional info...

    Calories: 1170 (YES, it's up there...but like I said, I was using it post-gym. I don't eat this all the time).
    Protein: 51 g
    Carbs: ~60 g (it's good carbs though—not sugary refined crud)
    Fat: 65 g (kinda hefty, so again, balance it with healthier food and drink plenty of water)

    So here we go....

    You will need the following:

    2 medium potatoes
    3 eggs
    2-3 slices bacon
    6 oz pre-cooked smoked beef sausage
    olive oil
    salt and pepper

    Potatoes:

    • Dice your potatoes on a cutting board
    • Pour 1 tbsp of olive oil into a pan and let it heat on medium for about 3 minutes
    • Drop in the diced potatoes, moving them around with a spatula occasionally
    • After about 10-15 minutes (or whenever they look ready), sprinkle on some salt and pepper (go light on the salt, though...the sausage and bacon give enough)
    • Put potatoes on a plate and leave aside
    Bacon-sausage:

    • wrap 2-3 slices of uncooked bacon around your cooked sausage (I only used 2 slices of bacon, but you may want 3 to fill things out)
    • be ready to drop the bacon-wrapped sausage into the pan as soon as the potatoes are removed
    • it should need to cook about 10 minutes. The bacon will visibly cook, so leave it in, turning frequently, till it reaches how you like your bacon
    • When finished, add the bacon-sausage to the plate of potatoes
    Eggs:

    • remove the bacon grease from the pan and add another tbsp of olive oil (this is healthier than what I did...I just used the bacon grease, but I wish I hadn't)
    • drop in 3 eggs
    • Let cook for a few minutes (again, it's up to how you like them)
    • Add eggs to the plate
    And you're done!

    I know this is a heavy food, but if you're into fitness, it's pretty awesome, or if you just want some breakfast-comfort food.

    I would have loved this when I was younger. Now that I'm older and actually go to the gym, I think this would kill me.

    I know! Considering calorie intake, I can have this in the morning and nothing else all day and I can say that I had a 'lean' day. :D

    Hi guys,

    at least as for the calendar, spring has come (?) to the norther hemisphere. Which reminded me of a post once from @RockyRoadHux regarding Spring Rolls of course.

    So I like to share an cozy evening when being invited some time ago to a family dinner, aka ;Spring Roll Workshop’, in Ho Chi Minh City…

    This was teaching a westerner all about making your own rolls. I was amazed what those people had prepared for the evening:

    Interesting to note was, that only all of this was for putting together fresh summer rolls. Besides the veggies, we hat cooked pork with lots fat and rind, as well as shrimp and rice noodles. The (self-made) sauces for dipping of course included fish sauce, chili and garlic.

    For the Spring Rolls, there was a ‘just’ a bowl of minced and diced ingredients put together like pork, garlic, mushrooms, onion, carrot and a plant, were we weren’t able to come up with any English name for it. So you started by placing the rectangular rice wrapper in point down orientation before you, adding a about two table spoons of the mush lengthwise.

    Then carefully folding the wrapper around the filling, keeping it tight all the times to prevent the rolls from falling apart when being fried. Applied some water drops with the fingers to have the rice paper stick at the initial fold.

    Next step folding the left and right points firmly over to the middle.

    Roll straight to the end, using some drops of water to make the rice paper stick at the end.

    Repeat about a hundred times ;)

    And then off to the pan with lots of hot oil for deep frying. Voila!

    And then it was about time to make some fresh summer rolls, which is an abundant practice when it comes to Vietnamese eating. This is were all this fresh stuff comes into use.

    Here you're using much lighter, moistened rice paper (round, not rectangular) and put in whatever you like. And when you’re a pro, the end result will not look like a chrysalis. But it tasted well nonetheless.

    Former Greywalker and I went to this quaint little Croatian resturand called Grandfather's Dream. We started with a plate of assorted dried meats and cheeses, with bottle of white wine. For the main course she had the Octopus salade and I had the grilled eel.     Wow, that meal looks amazing.

    Mmmmmm, eeeeeel.
    My last eel meal was much more crude but still delicious.
    Caught on a hand-line and cooked on fire stones in an earth pit we dug with some fresh manuka branches for smokiness.
    Yum.

    Be sure to give a shout out to Greywalker for me next time you touch base.
    I was wondering where she's been - it's not the same around these parts without her quirky input!

    Yesterday we made a delicious Croatian style pizza. With home made sauce, fresh mozzarella and buffalo mozzarella, mushrooms and prosciutto.
