Since it's pretty much confirmed that Luke and Rey will have a lot of time together in The Last Jedi, should Luke explain his father and the other Jedi to Rey?

Maybe explain the faults of the prequel era Jedi Order. Explain the Skywalker family heritage to Rey (if she is indeed a Skywalker)

I'm sure he might explain some of the OT to Rey.

he'll have to explain the Skywalker family to Rey whether she's related or not.
given the track record of destruction that follows this family for not telling each other important things, hopefully Luke will spill it all.

Absolutely he should mention Anakin Obi-Wan & Yoda. He will need to in order to provide context for his training how much Rey will listen is another matter

    Luke: Ummm...next question.

Rey:. Did Darth Vader build C3P0?

    Luke:. Ummm...next question.

Rey:. Are you going to tell me any events that happened before the Empire took over?

He should, but not too exposition heavy (one for the writers)...

But will he? I don't think so...

I think it may be Yoda or Obi-Wan or even Anakin that appears directly to Rey (with no onscreen explanation)...

I hope they do more than mention them. I hope for a full on conversation between the ghosts and Luke/Rey.

The only way forward for Luke, and any new Jedi-like aspirants and "order," is to fully disclose -- and, as importantly, learn from -- history (and not just the "good parts" but rather the many mistakes made on all sides of the battles thus far).

Only then can they begin to live honestly, in accordance with what is, what was, and why, and then be better prepared to contemplate what could be.

Only then can they begin to make more informed and wiser decisions, and proceed to draw new hope and strength from such truth, which can then, eventually, help to set them, and the greater galaxy, free from the generational cyclicity of suffering.

I expect he will at least mention the jedi masters who instructed him if for no other reason than as an explanation as to the approach he takes (or doesn't take) with Rey. And I wouldn't be surprised if he told her about his own father when talking about the path that Ben is currently on since she has had some personal interaction with him already.

Personally, he ought to mention some of the stuff, but what we do not know is what he knows and does not know. How much of the history (and what appeared in the PT) does he actually know? Has he talked to his father's ghost? Has Kenobi or Yoda mentioned those things? I would expect that he ought to know quite a bit and that knowledge ought to be passed on. Failure to mention it could cause future problems.

I love those things in sagas. It gives backstory and some kind of mythology.
Could be nice to hear their names, at least. More or less what Rogue one did, speaking about old characters.
Is like reading a book. If they mention Anakin, Yoda or Obi Wan, we can imagine those characters in the described situations (and the different actors depending on time).

There won't be much time for anything since TLJ is starting right after TFA.

These kinds of things usually are learned in-between movies as Luke must have done and is doing so in the canon right now.

The way this is working Rey will have the same TFA lighting fast "learning" ie it just happens.

I imagine that they will go light on exposition to maintain the mystique that the OT had. I can very much see the writers' desire to have Luke be as vague with Rey as Obi Wan was with Luke in Star Wars. He will probably speak to her in a broad, general manner and not give a lot of detail. And THAT may be for the best.

The real book cracking can be done off camera and between films. The way we all assume Luke did after Jedi.

It would be absurd, and probably negligent of him to not mention these things.

Considering Luke was on a quest for Jedi lore (at least for the first temple) I wouldn't be surprised to hear him describe it briefly as part of a broader story.

"Millenia ago, the first Force users spilt into two groups, the Jedi and the Sith. Eventually the Jedi prevailed, or so they thought, but the Sith persisted. The Force became unbalanced, and there was a prophecy of one who could destroy the Sith for good. It was believed that my Grandfather, Anakin Skywalker was the one spoken of in the prophecy. He turned to the Dark Side but eventually returned to the light and in doing so ended the succession of the Sith. This left another kind of imbalance in the Force, and you Rey, have been called upon by the Force to help regain that balance."

I love it right till the end. Anakin brought balance to the force. His actions did not create a new imbalance. The Dark Side and its motive caused imbalance in the Force this is mirrored in the galaxy by the selfish consuming power of Sidious. The new struggle in the PT is the how will the balance be maintained. "Without the Jedi there can be no balance."

I guess he would kind of have to since she seen and heard things that make no sense to her. I'm sure when she mentions what she saw and heard it will certainly give him the incentive to explain his own backstory, who his father was, etc. So, yes.
