    My Christmas Wines

    first up a really good Chardonnay from Argentina.

    A fantastic Chardonnay that reveals a really good Chablis. The high altitude & limestone heavy vineyards helps give it that freshness that I prefer in my Chardonnay.

    Next up is a red from the Campania

    It always sucks when you expect one thing and then get something else instead... (I know the expression and I know the feeling... :confused:)
    I've had it a few times... both times I thought it was a glass of 7up/Sprite... instead, one time I got carbonated water.... the other time it turned out to be Tonic....:eek:

    I was lucky enough though, to experience the real thing (Absinthe), it was an absolute treat... :cool:
    The barman should have also told you it is certainly not to be taken as a shot! (he probable knew full well it wasn't the real deal to begin with)

    I'm sorry you had a bad experience with Licorice. :(
    It is actually a guilty pleasure to me... :oops: if not a well contained addiction! :rolleyes:
    So for my personal concoction I have no qualms to use Licorice as a means of coloring. (also saves me from charcoal granules spoiling the texture) :D

    Anise oil is actualy often used to enhance the flavor of Licorice candy. It's a cheaper ingredient than Licorice root extract, so that makes sense from a business point of view, I guess...

    I don't drink alcohol, mainly because it would turn my epilepsy medicine toxic. So my main vices are sodas instead, mostly Pepsi and Sunkist orange.

    Fortunately for you, this thread is in no way exclusively alcoholic! :)

    So whatever you're drinking... whether it's soda, juice, water, coffee, tea or any other liquid beverage... weird, exotic or frightningly normal... you are welcome to share it here! ;)

    You can just pop by and just say: "Had herbal tea with honey today." Or you can create your own weird concoction and you'd like to share the recipe, with photos and all... this is the place to do just that! :cool:

    So I opened up this fantastic white from Mt ETNA ( Yes that ETNA the active volcano on Sicily ) last night & will be enjoying it over the weekend.

    So last sunday, I finally opened that very special 2023 edition Kilchoman Loch Gorm, for my 50th B-day! :p
    Boy, was it worth the wait! (and about €80!)
    Very rich and peaty.


    For those who can't imagine what that's like... peat tastes a bit like the smell of the coal deposits from a burnt wooden structure... or especially for the Mercans here, like the smell of burnt rubber after a decent burnout!! :D

    If you don'[t like that smell, peaty whisky is not for you! :(
    But if you do however... well, then this is just liquid heaven!

    If you're a whisky novice, don't start with the peaty ones! You will want to take it easy, start with a nice Irish Jameson.
    Johnny Walker is another nice set of entry whiskies. Red, black and green label are quite affordable too.

    If you can spend a little more, go for a Single Malt though! Glenfiddich is nice and the ones I personally often go back to are Dalmore (12yo), Aberlour (12yo), The Balvenie (Doublewood 12 yo), Cardhu (12yo) and the Singleton 12yo.

    The 12 years old means that when they make a batch to be bottled, they make a mixture of the same kind of whiskey from different barrels and the youngest one they use, has been riping on oakwood barrels for at least 12 years. :cool:
    And the longer a whiskey has been allowed to ripen, the better and smoother the wiskey will be. Also leaving a bottle unopened is no problem, it can even improve the taste! (with high quality whisky, that is... if the retail price of a single bottle is below... say €/$50... don't bother saving it, just drink it and enjoy it for what it is.)

    Also, once opened, Whisky won't go bad that easily. Only when you're past halfway, don't take too long, cause then you can detect loss in quality.

    That concludes today's lesson... :p

    @Master_Farkaz Well. Certainly failed in the Don’t Take too long in finishing a bottle as I still have about 15cl left of my 2014 Loch Gorm edition & I also have about 1/3 of a bottle of my Hakushu 12 (. Which is now ridiculously expensive if you can actually find any) which my brother got for me in Japan in 2015 :D.

    What you can do, once you're between 50% and 30%, but you want to keep the quality up for longer (because you wish to savour a very particularly special whisky), you find yourself a smaller bottle, maybe multiple.. just in case (50cl and 30cl)! Preferably with a cork!
    Thoroughly clean the cork and clean the bottle with boiling water or actually boil the bottle! Like with jam and pickle jars! This way you can ensure there are no contaminents.

    Then you slowly pour the whisky and preferably fill the smaller bottle up to an inch (2½cm) under the cork.
    You see, it's the oxygen in the airpocket that degrades the whisky.

    Therefor, in case you know you wish to preserve a whisky for more than 6 months and possibly years, you really need to pour it into a smaller bottle!

    Oh... and don't forget to write a label, or else you'll have a collection of whiskies, without knowing which is which! :D
