Because it offers highly interesting and compelling storyline with even greater possibilities that would re-shape the way we see the entire SAGA.
    Clear enough?

And let it be said that Palpatine defeated him. So why the amount of interest in him is mind-boggling. As far as we know he is dead. But even if he is not, his apprentice still overtook him. So why should he be even more intriguing than Palpatine?

It's because people would rather have a painfully obvious villain in Plagueis, as opposed to a new, unknown villain with a mysterious past in Snoke.

    Some thoughts:
The tragedy of darth plagues the wise, is a sith legend, those are the opening words spoken by Emperor Palpatine.

    1. It describes darth plagues the wise who leaned to use the force to create life and keep the ones he cared about from dying.
    2. The only thing he feared was to loose his power.
    3. He taught his ways to an apprentice, who was not named, who then killed him.

    Addressing the speculation
People have speculated that palpatine is the apprentice, but here are a few simple reason why he is not.

    1. palpatine states "my mentor taught me everything about the force"

    2. When anikin is converted he asks palpatine if he will teach him to also cheat death.
    3. Palpatine answers "to cheat death is a power only one has achieved, but if we work together i know we can discover the secret“

    Simple conclusion:
If palpatine had been taught by plagues and was the apprentice mentioned in the tragedy of darth plagues the wise, he would have known how to cheat death and been able to teach anikin not, as he states, have to learn it together with anikin.

Disney never will go this way, I think.
And yes, Palpatine himself doesn't know the secret and just lied to his new puppy.

    I'm not.

Everyone is obsessed with Plagueis and Rey being Luke's daughter. I don't understand that hype.

Even in the story he wasn't immortal?

He taught his apprentice and was killed by him.
    palpatine could
"use the force to influence the midi-chlorians to create life, even keep the ones he cared about from dying"

But what if we argue that he is plagueis by means of the evidence provided by the 'knights of Ren' We all know how Plagueis was obsessed with immortality.

    a. 'Ren' means lotus in Japanese: in asian and japanese literature, the lotus is often used as a symbol for immortality. 'Ren' also means 'humanity' in Chinese. Before the force awakens I introduced the latter theory as an alternative in this video:

My contribution starts from 3:35. I was actually very suprised I was mentioned by name in the video, but only found out one month later because someone pointed it out to to me. At the moment however, and after seeing the force awakens, I prefer immortality as the symbolical meaning of 'ren' above interpreting its meaning as morality.

    b. There are 7 Knights of Ren in Rey's vision sequence: in western medieval literature the number 7 is symbolical for the seven vices/ deathly sins as well as the resurrection of the body with the return of Christ. Man must burn in purgatory to remove the depth of each sin before he or she is allowed to participate in Christ's salvation and eternal life. Again immortality.

Well when he had the balance of life & death at his grasp it kinda made him a sith god until Sidious reminded him of his mortal existence.
